Image understanding is the final stages in image processing that tries to make sense of what the image represents, not merely the pixels in the data. Object recognition is a critical part of image understanding, but there may need to be further levels of interpretation, for example being able to tell that a small person and a round object is a picture of a child kicking a ball.
